Junglee Chicken Sandwich
The chicken is not from the jungle, but the taste is rustic yet modern! Very versatile recipe, and can be made into tasty healthy snack as well. This is a perfect example of Indian taste merging with modern flavours and
styles. You can make this sandwich in minutes and is really great to take when along
for lunch or when you’re flying. These days, it’s always better to have your
own food rather than ordering in the flight and paying ridiculous prices for
small meals! Though the recipe I’m sharing is of chicken sandwich, you can omit
the chicken for a vegetarian version or replace chicken with shredded paneer or
tomatoes.

Ingredients
Boneless Chicken Boiled 250gms
Mayonnaise – 2 tbsp (eggless mayo if you are a vegetarian)
Pudina/Mint Chutney – 3 tbsp
Onion – 1 finely chopped
Carrot – 1 finely chopped or grated
Salt and pepper to taste
Brown/white bread - 8 slices
Cheese slices- 4 [optional]
Green Chilies chopped - 1 [optional]

Method
- Cut the boiled chicken into very small pieces or just shred it with hands.
- In a bow mix the chutney and mayonnaise.
- Add chicken, carrots, onions, chilies, salt and pepper. Mix well.
- Spread this mixture on the bread and cover with a buttered bread slice. Add a cheese slice if you like.
- Apply little butter/ghee/mayonnaise on the outer slice and grill the sandwich in a griller or on tawa. (Yes mayo can be used in place of butter as it already has oil in it)
- Cut off the sides of the bread if you want.
- Pack in tiffin box for your kids lunch or in a cling wrap and carry in your bag as the in-flight snack!
Don’t keep it in your check-in bag!!
