Eggplant crispies slices |
Baingan ke chips! Sounds funny or too different or simply too
far fetched? You’ll think otherwise after making and tasting these. Ridiculously simple and so so tasty. Your kids are going to love this, and even the moms cos this is a much healthier option to potato chips. It’s not even deep fried, and is much more filling. So you can feel more satisfied with just a plateful than you do with even three bags of chips! There are so many ways you can use these – as chips for the party, as a side dish, as an appetizer, or just to put some on the salad to make it more wholesome and filling.

Serves: 2-3
Preparation Time - 15 Mins
Ingredients
Egglplant (thin long variety, not the big Brinjals used for bharta) – 2
Amchoor Powder – 2 tsp
Red Chilli powder – 2 tsp
Garam Masala – 1 tsp
Jeera Powder – 1 tsp
Salt to taste
Oil – for pan frying
Method
- Cut the eggplant into thin round slices.
Crispies with Grapple salad - In a cup, mix all the spices and the salt.
- Heat a little oil in a non stick pan.
- Place the eggplant slices on the pan so no slices overlap each other.
- Keep the heat on medium.
- After 5 mins or when you feel the slices have crisped up, turn their side.
- Sprinkle a little of the mixed spices on each slice and cover with a lid. This helps the crispies cook well.
- Cook on low flame for 5 mins and take off the stove.
Served on a salad - Serve hot garnished with chopped coriander or just like that. Enjoy the healthy crispies!
